The food regulations seem to be pretty straight forward, however, making sure all the food stays in the safe zone and doesn't enter the danger zone. I would say this would be the hardest just because when you have to serve several little people, it can get hard. Just make sure that you are properly staffed and have the help you need.

With food safety, when storing and preparing meals for children in a child care setting some of the things that should be done to ensure food safety is to first wash your hands often with soap and water while preparing food, wash and sanitize work counters and surfaces like cutting boards and utensils and can openers after each use. Using separate cutting boards and utensils for raw meats than the ones you use for fruits, vegetables, and other foods. Put frozen meats into a pan before placing them in the refrigerator to thaw, never thaw meats on the kitchen counter.
