There aren't any challenges with this. Providing one fruit/vegetable per snack with another item (for our students, they LOVE crackers of any kind, so try for whole grain with occasional "goldfish" treats). In fact, I *wish* I ate as healthy a diet as our kids do, but Bellevue College sometimes gets busy and I end up in a fast food drive through to prevent cannibalism during class :-). Really, though, we tend to eat a very healthy diet (aside from me having to eat fast food occasionally) and that transfers to how we plan our snacks.
