To me, food handling and preparation regulations are some of the easiest health regulations to implement. Perhaps that's because the kitchen does most of the work for us already. It's just a matter of serving the food to the rambunctious kids, most of the time. We wash hands and use gloves and are carful to not let food sit out too long.
One thing that is difficult is that sometimes the responsibility of washing fresh produce such as apples falls upon us, which really slows down our lunch serving process at a critical time of day.
