Personally, I have always typically left a lot of my leftovers sitting on the counter because it hasn't made me sick yet. That's obviously not safe practice, and something I've been trying to cease in case I ever become pregnant. It would also be bad practice if I did that at a child care center because then that left over food would have to be discarded (when in doubt, throw it out). Also, it might be difficult for me to remember to keep food at a certain temperature before it is served. I would imagine that the childcare center I work in would have a typical procedures that prevent me from making these mistakes - such as leaving the food at a certain location and having someone assigned to check the food temps and put leftovers away immediately.
