I think a fun science/color project is with white carnations. It may take a few days to a week for results. For about, $5.00 you can buy a bouquet of the small variety of carnations which come with many blooms to a stem.
Mix water and food coloring in clear plastic cups. You can add more food coloring to make very dark hues or more water to make lighter hues of your color. You can mix primary colors together to make purple, green, orange, or even try some of the neon food coloring. Set up an observation area. We have an observation table where the children can sit or stand and look at their carnation throughout the day. We put the cups in aluminum trays so if there is any spillage it’s contained. All week we talk about what is happening with the colors of our carnations. The children can take a few carnations home in a small plastic sandwich bag at the end of the week.

And idea I’ve had about mixing colors would be having the children make color wheels using paper plates. I would give children one big paper plate for the primary colors and a smaller paper plate for the secondary colors and once it’s dry putting your bread in the middle that way they can turn the smaller paper plate and demonstrate what happens when you mix certain colors together.
