Everyday you should go through the same cycle: observe, reflect, and plan.
Take notes and make observations about the children in your ask. Review the notes and ask yourself what it all means. What can the child do? What do you want them to accomplish? Come up with ideas on how to help them learn more.
In addition to individual learning, think about group activities that can incorporate other learning areas like math, social skills, and physical development (such as playing a teeball game or growing a garden during outdoor activities time).
